Bacon Wrapped Tilapia Recipe

Chomp. This recipe is super fast so it is perfect for busy afternoons after work when I am really just trying to play with my little dude and not spend all afternoon in the kitchen. It was also pretty dang tasty (I mean anything wrapped in bacon is hard to screw up right?!?). Hope you like it as much as we did!

Bacon Wrapped Tilapia

Serves: 4-5
  • 2-3 sweet potatoes cubed
  • 2-3 zucchinis cubed
  • 4 tilapia fillets cut into halves
  • 3 cloves garlic, grated
  • 8 strips of smoked bacon
  • 2 tbsp of lemon juice
  • salt and pepper to taste (I prefer kosher salt on the sweet potatoes)
  1. Preheat oven to 375
  2. Toss cubed sweet potato and zucchini in olive oil and sprinkle with kosher salt, pepper, and any other spices you like.
  3. Spread the veggies in a single layer on a baking sheet and bake for about 40 minutes, until fork tender (check on them and toss them every 10 minutes as cooking time will depend on the size of the cubes)
  4. Mix the garlic, lemon juice, salt and pepper in a small bowl.
  5. Rub tilapia all over with the mixture. Set aside for a few minutes.
  6. Heat a frying pan to med/high.
  7. Wrap the filet in bacon.
  8. Place the bacon wrapped filet in your preheated pan.
  9. Cook on each side 3-5 minutes (bacon should be crispy and filet should be flaky)
