Quinoa Zucchini Cake Recipe!

 The Monday Meal:

Every year during Lent, I struggle with thinking up healthy, meatless meals for Friday so this year I turned to all my favorite places for inspiration.  This recipe is an adaption from a recipe published by my favorite purveyor of all things awesome AKA Trader Joe’s. They packed some serious flavor and were a crowd pleaser all around.  Hope you like it as much as we did!

Quinoa Zucchini Cakes

Quinoa Zucchini Cake Recipe!

Ingredients
  • 2 cups Tri-color Quinoa, Cooked
  • ½ cup Shredded Mozzarella
  • ½ cup of Parmesan Cheese
  • 1 cup Low Fat Cottage Cheese
  • 1 cup Zucchini, Grated
  • 3 Eggs, Beaten
  • 3 Tbsp White Whole Wheat Flour
  • 2 Green Onion Stalks, Chopped
  • 1 cup Panko Bread Crumbs
  • 3 Tbsp Olive Oil
  • 1 tsp Cumin
  • 2 Cloves Garlic, Chopped
  • Salt and Pepper to taste
Instructions
  1. Combine all ingredients (minus the EVOO and Parmesan) in a large bowl.
  2. Form into patties on wax paper and sprinkle both sides with Parmesan.
  3. Refrigerate for 10 minutes or more.
  4. Heat Olive Oil in a skillet to medium-high heat.
  5. Cook the cakes for a few minutes on each side, until golden brown on each side.
  6. Serve hot.
